My Best Kid-Friendly Chili

My hubby and I both adore spicy chili! But I have to adjust my cuisine to suit the tastes of the three little children. To make up for the lack of spice, we like to add a few dashes of Sriracha® or freshly chopped jalapeno and onion. The youngsters like goldfish crackers on top best! However, as with any chili, feel free to garnish it however you like. If you’re fortunate enough to live close to an Italian market, we recommend the salsiccia. If not, you can use a different variety of ground Italian sausage. Despite having little spice, it is flavorful!

Ingredients

  1. 1 green bell pepper
  2. 1 pound ground beef sirloin
  3. 1 pound ground salsiccia sausage
  4. 1 tablespoon olive oil
  5. 2 onions, diced
  6. 6 cloves garlic, minced
  7. 2 (15 ounce) cans chili beans, undrained
  8. 1 cup brewed coffee
  9. 1 (7 ounce) can diced green chiles
  10. 5 tablespoons unsweetened cocoa powder
  11. ¼ cup ground cumin
  12. ¼ cup chili powder
  13. 1 (28 ounce) can canned crushed tomatoes
  14. 1 cup water, or as needed
  15. salt to taste

Instructions

  1. Set oven rack about 6 inches from the heat source and preheat the oven’s broiler. Line a baking sheet with aluminum foil.
  2. Place green bell pepper on the prepared baking sheet.
  3. Broil bell pepper in the oven, turning every 5 minutes, until skin is blackened and bubbling, about 20 minutes. Transfer roasted pepper to a resealable plastic bag; seal and set aside.
  4. Heat a Dutch oven over medium-high heat. Cook and stir ground beef and ground sausage in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer ground meat to a bowl.
  5. Heat olive oil in the same Dutch oven over medium-low heat; cook and stir onions and garlic in the hot oil until onions are translucent, 5 to 10 minutes.
  6. Carefully remove roasted pepper from the plastic bag and peel off the blackened layer; chop the pepper. Add chopped bell pepper, ground meat mixture, chili beans, coffee, green chiles, cocoa powder, cumin, and chili powder to the onion mixture; stir well. Simmer, stirring frequently, until warmed, about 5 minutes.
  7. Stir crushed tomatoes and water into chili; season with salt. Bring to boil. Cover Dutch oven, reduce heat, and simmer, stirring occasionally, until flavors have blended, at least 30 minutes. Remove cover and simmer until chili is thickened, about 30 more minutes.
  8. Sriracha(R), sour cream, shredded cheese, goldfish crackers, cilantro, fresh chopped jalapeno, onion, or crushed tortilla chips.

This chili is very interesting. The chocolate flavor is pretty strong. I felt like between it and the coffee, it made it a little bitter. I had to add some brown sugar to offset the bitterness. Once I did that, my 6 year-old liked it. I used tomato sauce instead of crushed tomatoes and mild sausage instead of the one listed. Also, I just used diced green peppers instead of roasting them. Also, the amount of chili powder was a bit much for what my kid can handle, so I cut that in half. As written, I’m not sure this chili is very kid friendly with the bitter chocolate, coffee and amount of chili powder. This recipe has definitely given me some ideas for future chilis though.

I halved the recipe since I have a small family but I used the full tomatoes. I did not use the Salcippa (sp?) sausage as my grocery store didn’t have it. Just used the beef – and not sirloin (too expensive). I only used a sprinkle of cumin and sprinkle of chili powder (1/4 of each really sounded like a lot?). I did not broil the peppers, I just diced and cooked them with the onions and garlic. Kids loved it. Will make it again.
