Cheesy Spinach Ramen Frittata

Ingredients

  1. 2 tablespoons olive oil
  2. 1 bunch green onions, chopped
  3. 2 (5 ounce) packages fresh baby spinach
  4. 3 tablespoons water, divided
  5. 2 (3 ounce) packages ramen noodles (flavor packets discarded)
  6. 7 large eggs
  7. ¾ cup garlic-and-herb spreadable cheese (such as Alouette®)
  8. ¼ teaspoon salt
  9. ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat oil in a 10-inch ovenproof skillet (with lid) over medium heat. Cook green onions, stirring occasionally, until softened, about 2 minutes. Add 1 package spinach and 2 tablespoons water and cook, covered, until wilted, about 1 minute. Stir spinach with tongs, then add remaining package spinach and remaining tablespoon water. Cook, covered, stirring once or twice, until tender, about 2 minutes. Remove skillet from heat.
  3. Meanwhile, bring a saucepan of salted water to a boil. Break each ramen noodle block into 4 pieces and cook, stirring occasionally, until just tender, about 3 minutes. Drain noodles in a colander and rinse under cold water. Toss noodles with spinach mixture in skillet and spread mixture evenly over bottom of pan.
  4. Blend eggs, spreadable cheese, and salt in a blender until smooth. Pour egg mixture evenly over spinach mixture. Stir spinach mixture gently with a fork to allow egg mixture to flow underneath. Sprinkle top with Parmesan cheese.
  5. Transfer skillet to oven and bake until puffed slightly and a toothpick inserted in center comes out clean, about 35 minutes. Cut into 4 wedges and serve from skillet.

It came out looking great but like others said it is very bland and missing something. The only thing we could taste was the butter. We kept discussing what was missing or what could help. I wondered if adding some shredded cheese to the mix could have helped (edit: it didn’t). It wasn’t awful but it’s not worth the effort at all. To be honest regular ramen noodles would have tasted better. Maybe instead of leaving out the ramen spice packs you add it instead? I wouldn’t be willing to cook it again to find out. 🙁

I think this recipe has some serious potential. As it is made it is bland in flavor but has soooo many possibilities. We ate ours with salsa and loved it. Next time I am going to add more of the cheese spread and maybe a little cheddar cheese. I am also going to precook some sausage or ham and toss it in. I mean you can do anything to this recipe. Make it once as is and then experiment with it. I do recommend more garlic cheese spread and I used real ramen Noodles not the kind that come with flavor packets. I didn’t break up the noodles because it was too messy. My family ate spinach. So it’s a winner for me.

This recipe was really easy to make and it was a hit with my family. However, we did all agree that it’s missing something. We’re just leery of adding sausage or bacon due to the grease. We don’t want to lose the fluffiness. We may just serve it with a side of sausage or bacon.

I changed up a little and added mushrooms instead of onions as we don’t like onions of any sort. Very bland and the ramen were absorbed to the point that you didn’t even see them. I followed exactly how to make them and they vanished. Weird. That probably took away from taste as well. Would make my way again minus the ramen and I would not blend eggs in blender with cheese (I used Borsin), I would just whip eggs by fork and add in dollops of the Borsin.
