Hummus Dip

Ingredients

  1. 2 (15-ounce) cans chickpeas, drained and rinsed
  2. 1/2 cup extra-virgin olive oil, or more as needed, plus more for garnish
  3. 1/2 lemon, juiced
  4. 2 tablespoons roughly chopped fresh parsley leaves, plus more for garnish
  5. 2 cloves garlic, peeled
  6. 1 1/2 teaspoon salt
  7. 1/2 teaspoon dark Asian sesame oil
  8. 1/2 to 1 teaspoon ground cumin
  9. 12 to 15 grinds black pepper
  10. 1/4 cup water
  11. Paprika, for garnish

Instructions

  1. In a blender combine all the ingredients except the parsley and paprika to be used for garnish. Blend on low speed until smooth. You’ll have to stop the blender often to push down the ingredients. If the mixture is too dry and you’re having trouble blending it, add a few more tablespoons of olive oil to help things along.
  2. Scrape the hummus onto a plate. Sprinkle the paprika over the top, drizzle lightly with olive oil, scatter some parsley on top, and serve. You can make the hummus up to a couple of hours before you serve it. Cover the top with plastic wrap and leave it at room temperature.

My husband is Greek so I make hummus quite often using tahini. I never really cared for it although he loves it. The tahini always seems a little bitter to me. I tried this recipe for a change and it was amazing, the flavors balanced. I followed recipe to letter except for the salt; I used canned chick peas and wasn’t sure what kind of salt the recipe wanted. I used table salt and only added a teaspoonful and it was perfect. My husband thought it was the best hummus he had ever tasted

This recipe is amazing!! Check the ingredients of the chickpeas to make sure it doesn’t have a high salt content. If they do adjust your added salt to the recipe. Otherwise, this is AMAZING!!

This is an amazing hummus recipe.  I’ve made this so many times I’ve lost track of how many.  Sometimes I add a jalapeño to the recipe which gives it a nice spice.  Also, I always add 4-6 cloves of garlic, because one can never have enough garlic.
