I made this smoothie since I had more basil than I could use. Any berry can be used, and the result will always be excellent.

Ingredients

  1. 1 cup mayonnaise
  2. ½ cup sour cream
  3. 1 teaspoon curry powder
  4. 1 small apple, finely chopped
  5. 1 tablespoon lemon juice
  6. 4 cups cooked chicken breasts, shredded
  7. 1 cup chopped celery
  8. 1 cup seedless green grapes, halved
  9. ½ cup chopped pecans
  10. 1 (8 ounce) can crushed pineapple in juice, undrained

Instructions

  1. Mix mayonnaise, sour cream, and curry powder in a bowl until smooth.
  2. Toss apple and lemon juice in a large bowl. Stir in chicken breast meat, celery, green grapes, pecans, and pineapple. Pour mayonnaise mixture over chicken; toss to combine. Cover and refrigerate until chilled.

Delicious I poached a bone-in chicken breast so cut the recipe by half. I didn’t use all the dressing but agree with other reviewers that the curry powder makes the dish. I used half an unpeeled Pink Lady apple (the skin isn’t thick, and it adds color) and chopped all the ingredients finely except the chicken, which I cut in 1″ cubes. Yummy!

I loved it but not everyone in the family did. Someone described it so accurately as a cross between a waldorf & curry chicken salad. Next time, I would drain the pineapple because mine was a little watery.

I love this recipe. I am vegetarian so instead of chicken I substitute either tofu, seitan, or Quorn meatless pieces. Other than that, I follow the recipe. Just thought I’d share that information if anyone would like to make it vegetarian it is still excellent.

This salad was absolutely delicious. The flavor profile is a cross between a classic waldorf and curry chicken salads. I made it as written, but used red grapes instead of green for color. The recipe didn’t specify what type of apple, so I chose Granny Smith. Next time, I think I would add a little salt to bring out more flavor, maybe 1/4tsp and a little freshly ground black pepper, too. I will definitely be making this again, served on all-butter croissants. yum YUM!!! yummyummmm…it was so good, I’m going to go make another sandwich RIGHT NOW! :p

I will only review a recipe if I made it exactly according to the RECIPE. It’s an unusual combination of ingredients, but it is really,really good!i loved the sweetness of the pineapple. Would never have thought of adding pineapple to chicken salad, but along with the crunchy ness of the apple, celery and pecans it’s was awesome! Will keep this recipe and make again.

So disappointed!!! Essentially, this is a crunchy grape salad with mayo & sour cream dressing…and some other stuff. It was bland, boring – almost tasteless – with too much dressing. We served it to guests, based on ratings :(. The tastes which predominated were grape & the dressing (but with no influence from the curry powder, which I bought specifically to make this salad [Morton & Bassett brand, best by June 2021]). Celery, apple, and pecans added crunch, which was crucial, but no taste. Followed the recipe exactly (using fresh pineapple with its juice, which should only have improved it). If you like very mild flavors plus grapes – not challenging to the palate – this is a good option. Or if you eat a lot of chicken salad & want something different, try it, but only if you have the ingredients on hand & don’t spend extra money. I have a similar, generations-old recipe from my husband’s great-aunt, and will be returning to that one.

I made this for my son’s wedding rehearsal dinner, and it was a HIT…people I have’d even met before came up to me asking for the recipe…I added tiny bow-tie pasta and raisins…it was a hit!! I did use mandarin oranges instead of pineapple…making it again for a 4th of July picnic…

Made it just as the recipe says. It’s soooooooo delicious! A hit at my party. Now I eat itby the spoonful lol. Can’t imagine deviating one bit. The curry is splendid and the green grapes turned out to be the perfect sweet contrast. Will definitely make again!

I’ve made this recipe twice now and the three of us really liked it. I added a cup and a half (uncooked) of small pasta to make it a one-dish meal. Next time I make it I think I will try draining the pineapple at least partly. The juice helps flavor the dish but I don’t like the puddle in the bottom of the serving bowl.

OUTSTANDING!! This recipe is very forgiving if you have extra cooked chicken (I had half of an eight pound roasting chicken to dispose of, so I probably had close to six cups of chicken). I’m not sure I would chill this (I didn’t) because serving it at a little under room temperature, due to the chill of the mayonnaise and the sour cream, really lets you appreciate all the wonderful flavors.

I loved this recipe as is. Yes there are some things I would add or change. But to give a true review please follow the recipe as it is given. I can not stand those who change the recipe with there own additions and than post how much they loved it. To all, please make the recipe as stated and than say what you would change or add. MAKE THE RECIPE AS LISTED!!!!!!!
