Ingredients
- 1 pound bocconcini (fresh mozzarella balls)
- 1 pound cherry tomatoes
- 1/4 cup olive oil, plus additional for drizzling
- 3/4 teaspoon salt
- 1/2 teaspoon red pepper flakes
- Freshly ground black pepper
- 1 bunch fresh basil
- 1/2 large baguette, cut into 1-inch pieces
Instructions
- Prepare a grill for medium-high heat.
- In a large bowl, combine the bocconcini, tomatoes, oil, salt, pepper flakes and some black pepper. Toss until fully combined.
- Build the skewers: Thread basil, tomato, mozzarella and bread onto long wooden skewers; repeat in that sequence. Place the skewers on a baking sheet and drizzle oil over the bread. Set aside for 5 minutes to marinate, then drain off excess oil.
- Grill, rotating constantly, until the cheese is warmed and the bread is toasted, 2 to 3 minutes. Serve immediately.

This recipe does NOT work! Why the bread on the skewers!! And try to eat this, lol. If you leave these on the grill long enough to toast the bread evenly you will be lucky to keep the cheese on here.The timing on these in her recipe is not accurate. I wouldn’t call this a marinade either. Oil, salt and pepper w/ red pepper flakes ? This is just okay and not an interesting take on these ingredients. FYI…the grill RUINS the basil so what is the point. These beautiful fresh ingredients so you grill them! Grill the bread and serve the rest fresh.
These were fun to serve. Keep a good eye on them though, once the cheese starts to melt they go fast.
