Roasted Broccoli Salad

Ingredients

  1. 1/4 cup olive oil
  2. 2 bunches broccoli, florets separated
  3. 1 small red onion, halved and thinly sliced
  4. Kosher salt and freshly ground black pepper
  5. 4 slices thick-cut bacon
  6. 1/2 cup sour cream
  7. 1/4 cup mayonnaise
  8. 3 tablespoons whole milk
  9. 1 teaspoon granulated sugar
  10. 1 teaspoon paprika
  11. 3 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Toss the olive oil, broccoli florets, red onion, 1 teaspoon salt and 1 teaspoon pepper in a medium bowl. Transfer to a baking sheet and roast, tossing halfway through, until the broccoli edges are crisp, 18 to 20 minutes. Let cool, then transfer to a bowl.
  3. Meanwhile, cook the bacon in a medium skillet over medium-high heat until crisp, 12 to 14 minutes. Chop and set aside.
  4. For the dressing, combine the sour cream, mayonnaise and milk in a small bowl. Season with the sugar, paprika, 1 tablespoon of the chopped parsley, 2 teaspoons salt and a pinch of pepper and mix together.
  5. Add the bacon and 1 tablespoon parsley to the cooled broccoli, then pour over enough of the dressing to coat and toss until well mixed. Garnish with the remaining chopped parsley.
  6. To make ahead, assemble the salad, cover and refrigerate.

Too soggy and the dressing was bland.  I won’t roast broccoli again.  I threw it away.  I’ve never had a bad recipe from Ree.

While the flavors were quite nice, the amount of salt called for (on top of bacon!) was far, far too much.  We ended up having to throw it away.  Might give it another go and cut the salt way back.

This was one of the first times I didn’t like a recipe from Pioneer Woman. It lacks in texture and taste. I would love measurements, like how much broccoli is 2 heads. I think mine might have been small and therefore too much olive oil. I won’t make it again. I’ll go back to my tried and true broccoli salad.

We love roasted broccoli and the traditional broccoli salad, but something about this just didn’t work. Threw the entire thing out, as none of us would touch it after the first taste.
