Sunny’s Easy Wedge Salad

Ingredients

  1. 4 strips bacon
  2. 1 tablespoon brown sugar
  3. 1 teaspoon steak seasoning
  4. 3 tablespoons balsamic vinegar
  5. 1 tablespoon hot honey
  6. 1 tablespoon chopped fresh parsley
  7. 1 teaspoon fresh thyme leaves
  8. Kosher salt and freshly ground black pepper
  9. 1 small red onion, very thinly sliced
  10. 1/2 pint cherry tomatoes, halved
  11. 1/2 head iceberg lettuce, cut into 4 wedges, leaving the stem intact
  12. 1/4 cup blue cheese dressing
  13. 1/2 cup crumbled blue cheese

Instructions

  1. Preheat the oven to 350 degrees F. Line a sheet tray with nonstick aluminum foil.
  2. Place the bacon on the lined sheet tray. Sprinkle on the brown sugar and steak seasoning. Bake until crispy, 15 to 20 minutes. Allow to cool enough to touch, then chop into bite-sized pieces. Set aside.
  3. In a medium bowl, whisk together the balsamic and honey, parsley and thyme. Season to taste. Add the onion and tomatoes. Let sit until the tomatoes are slightly darker in color and the onions have softened slightly, 25 to 30 minutes.
  4. Place the wedges on plates. Top each with the onion and tomato mixture and any remaining liquid. Drizzle the wedges with the blue cheese dressing and top with the crumbled blue cheese and the bacon pieces. Serve immediately.

Sunny’s wedge salad dressing is the best I’ve had and a sure hit with family and guests. Cheers to Sunny! Sunny makes my day sunny. So, Virginia, if nobody cares, it means you don’t care either, which conflicts with your taking the time to write about it. I, for one, enjoy sunny Sunny’s recipes, whether she chooses to put her sunny moniker in their name or not.

This combination of dressings is absolutely brilliant! I did not have hot honey so I added some sriracha. I also added some croutons that I make with toasted grocery store garlic bread. My family freaked out over this!

This is so refreshing and different!! My family loved it !! Will be great for summer with any protein but especially steak grilled!! You can customize this anyway you choose!! I added some french fried onions and DO NOT skimp on the bacon!! AMAZING!!

Would this work as a make ahead dish for lunches with storing lettuce, bacon and balsamic mix in separate containers and refrigerating that morning and then refrigerating till lunch?
