Ingredients
- 1 cup mixed cracked good quality olives, coarsely chopped
- 2 cups giardiniera salad (pickled cauliflower, hot peppers and carrots), drained
- 5 to 6 ribs celery from the heart, chopped
- 1/4 cup soft sun-dried tomatoes, chopped
- 1 fresh green bell pepper, seeded and chopped
- 1/2 red onion, chopped
- 1/2 pound stick salami, diced
- 1/2 pound thick cut ham, chopped
- 1/2 pound provolone, chopped
- 3 tablespoons red wine vinegar
- 1/4 cup extra-virgin olive oil, eyeball it
- Salt and pepper
Instructions
- Combine olives, giardiniera, celery, sun-dried tomatoes, pepper, onion, salami, ham, and provolone. Dress with vinegar and olive oil, season with salt and pepper and let stand a few minutes before serving.

even better the second day. great use for leftover ham. i used pepperoni instead of salami and threw in whatever pickled stuff i had, including pickled cauliflower, pickles and pepperocini.
Absolutely a great salad! You must give this one a try. Would be great for cookouts, pot lucks, etc. Can definitely see how any leftovers could wind up between two pieces of bread with some pickles too. I did not have a problem putting this together. Maybe 30 to 35 minutes tops. Family says this is a definite keeper. Easy, really tasty, and a great summer time meal all on it’s on.
this is definitely a crowd pleasing, different salad! Great for cookouts! However, Rachel is waaaaaaay off on the prep time. I’ve made this 3 times and the prep time is over an hour
Since the first time I made this recipe my Grandchildren (teenagers) request this every holiday. Easy to make which is good because I’m handicapped. I still feel like I can contribute something. Thank you so much Rachael, you ROCK.
Overall, this salad had a great taste. It was somewhat time consuming chopping all the ingredients, even with a food processor. I would definitely make it again. My husband and I ate it with several meals over the weekend (and I caught my husband eating it right out of the refrigerator numerous times). I would probably make half the recipe for the just the two of us again. I did not add ham to it, and would probably do the same again.
When I watched Rachael make this I knew that it sounded like something I might like. When I made it for a party I didn’t think that anyone would try it. I thought it was too chopped – But to my surprize many people loved it and asked me to make it again! It is like a big italian sandwhich without the bun. Although it would be great stuffed into a bulky Roll with pickles!! Thanks Rachael

This salad was easy and delicious. I took it to a potluck and everyone raved about it! The hardest part was all of the chopping and even that wasn’t a big deal. Great summer salad.
I used hot mixture of hot cauliflower, carrots and peppers. I love hot spicy foods. There is room for change but a great recipe!!! This is a wonderful salad that keeps for a few days even if your the only one who eats it. Way to go Rachel!!! Keep them simple with easy everyday ingredients!!!
This was pretty good. I had never had the pickled veggies before so I was a skeptic. My daughter that doesn’t really like many veggies even ate some. I only made a half recipe and I think I should have made the full recipe for the dressing. This is great for those of us on a low fat/carb diet. Great for a change for lunch.
