Ingredients

  1. 2 teaspoons sugar
  2. 1 lemon, juiced
  3. 1/2 cup sour cream
  4. 8 red radishes, thinly sliced
  5. 2 Delicious apples, quartered cored and thinly sliced
  6. 1/2 European seedless cucumber, thinly sliced
  7. 2 tablespoons chopped fresh dill
  8. Salt and black pepper

Instructions

  1. Combine sugar, lemon juice, and sour cream in a medium bowl with a fork. Add radishes, apple, and cucumber.
  2. Turn vegetables and fruit in dressing to coat. Season with dill, salt, and pepper, toss again; serve.

Overall, loved this dish, and in reading comments would consider adding switching apples for an alternative texture, such as egg, nuts. But, it was bright and refreshing as is!

First of all, thanks to the many helpful, knowledgeable reviewers here. I used a mandolin for all the fruit/vegetables, replaced the Delicious apples with Granny Smiths (personal favorite), and used dried dill because the only fresh dill left at the store was ridiculously expensive (really need to start that herb garden).  These were the only changes I made, I followed measurements and other ingredients exactly.  This was a great tasting, simple recipe with a reasonable number of ingredients. It will definitely become a staple among my springtime meals.

Had to use up some radishes from a produce delivery – this was surprisingly delicious! Used whatever apples I had on hand and subbed parsley for dill (b/c I had it). Can’t wait to make it with fresh dill in the warm summer months.

This is one of those quintessential Russian salads I grew up with. Of course, as with all highly traditional dishes, there is a lot of regional variation. Such as:

– Adding apples to salads is mostly a northern thing. St. Peterburgians add apples to every salad in existence, it’s as ubiquitous for them as parsley is for Americans. In other areas of the country, people generally don’t do this.

– In Moscow, where I am from, people add chopped hardboiled egg and minced scallions.

– In the south, adding cilantro is also common.

Just what I needed. I got two bunches of organic radishes in my coop shares and had all the rest in the fridge to make this original and very tasty salad; everyone loved it. The only change I made was shifting from sour cream, which I did not have on hand, to plain yogurt. The radishes were mild, had they been very strong or bitter that could changed the outcome. Taste them first, if that is the case, simply grate your radishes to disperse them among the cucumber and apples. Again, five stars for an original, very palatable, and not to forget fast salad.

I tried this recipe for Father’s Day. I thought is was a nice crisp, different salad. My family isn’t quite as adventurous so it was a “it’s ok salad” If I had it again I’d use a much tarter apple to hold up to the spiciness of the radishes.

I had just bought some huge radishes because they are so good for your liver and found this recipe. I don’t care for fruit salads so I omitted the apple and it was soooo good. The fresh dill really makes a huge difference. I could eat this every day!

We received radishes in our produce box, and I don’t like them, so I was looking for an easy way of preparing them.
This recipe was very tasty and easy. I used fat free sour cream, because I bought it by mistake, a Pink Lady apple, because I had one on hand, and dried dill weed, because I didn’t have any fresh dill. Even with those changes, the recipe turned out great.
