Ingredients
- 1 cup turbinado sugar
- 1/2 cup kosher salt
- 1/2 cup granulated sugar
- 3 tablespoons chili powder
- 3 tablespoons smoked paprika
- 2 tablespoons granulated garlic
- 1 tablespoon onion powder
- 1 1/2 teaspoons cayenne pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground black pepper
- 1 whole head cauliflower, leaves removed
- 1/4 cup (4 tablespoons) unsalted butter, melted
- 1/2 cup favorite bottled BBQ Sauce
- Homemade Ranch Dressing, recipe follows
- 1 1/2 cups mayonnaise
- 1/2 cup buttermilk
- 1 teaspoon granulated garlic
- 1/2 teaspoon minced fresh dill
- 1/2 teaspoon honey or agave syrup
- 1/4 teaspoon Dijon mustard
- Kosher salt and freshly ground black pepper
Instructions
- For the BBQ rub: Whisk together turbinado sugar, salt, granulated sugar, chili powder, smoked paprika, granulated garlic, onion powder, cayenne, cumin and pepper in a medium bowl. Set aside.
- For the cauliflower: Heat a grill for cooking over high heat and line a baking sheet with a large doubled piece of heavy-duty foil.
- Place cauliflower on prepared baking sheet. Coat entire head of cauliflower in butter using a pastry brush, then sprinkle 1/4 cup of the BBQ rub on the entire surface, including the bottom. Roll the edges of the foil up to create a rim around the cauliflower, then tent with more foil. Place baking sheet on grill and cook, covered, for 15 minutes. Carefully remove the foil lid and cook, covered, until just tender, another 25 minutes. Brush on BBQ sauce and continue to cook, covered, until nicely glazed, about 5 minutes. Cut up and serve with homemade ranch dressing, for dipping.
- Mix the mayonnaise, buttermilk, garlic, dill, honey and mustard in a bowl. Season to taste with salt and pepper. Store in an airtight container for up to one week.

OMG! This was so good. Did it on my gas grill as direction. Came out prefect.
I made this recently for a picnic get together with friends, this was a enormous hit! It did take quite a bit longer to bake on the grill than the recipe stated; probably close to 75 min in total before I could easily pull pieces off of the cauliflower head. However, this was delicious! I’ll definitely make this again!
I have made this cauliflower several times and it is amazing. I make a large batch of the rub and use it when making the dish. Makes it so simple the next time. Flavors are amazing.
Would’ve liked to have watched the video to make sure I was properly doing this but it was ALL ADS!!! So, I didn’t trust myself to make it.
Can this be done in an air fryer or oven
Was so good! Had to cook a little more like another 20 minutes for it wasn’t cooked thru. But my hubby said it tasted like a good barbecue meal!

I am not a fan of cauliflower, but trying to find a way to like it. This worked! I did not the butter, but used olive oil instead. The spice was just right, but it does have a kick! Next time I will do the bbq sauce on the side. Sorta liked it without it, but will use as a sauce next time. Wohoo! Now I can eat cauliflower and love it! Can’t wait to try on the grandkids and just eliminate some of the heat. Thanks for the recipe!
