Ingredients
- 3/4 cup freshly squeezed lemon juice (4 lemons)
- 3/4 cup good olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon minced fresh thyme leaves (1/2 teaspoon dried)
- 2 pounds boneless chicken breasts, halved and skin removed
Instructions
- Whisk together the lemon juice, olive oil, salt, pepper, and thyme. Pour over the chicken breasts in a nonreactive bowl. Cover and marinate in the refrigerator for 6 hours or overnight.
- Heat a charcoal grill and cook the chicken breasts for 10 minutes on each side, until just cooked through. Cool slightly and cut diagonally in 1/2-inch-thick slices.
- Skewer with wooden sticks.

I marinated for 6 hours in Zip Loc Bag. Chicken was tender and had good lemon flavor. It was a hit. I will make this again.
Great, light marinade. Who cares if the marinade congeals? I grilled ten minutes a side on a gas grill at about 325 – no flareups but grilled very nicely. Great high protein, tasty “diet” food when eaten with veggies!
My family likes this one, great weeknight recipe. Several have mentioned marinating for hours before cooking. While she mentions doing so in the video, I have never done that. Only prepped and cooked right after. if you use lime juice instead-sounds like chicken cervice.
LOVE THIS CHICKEN!!! Easy and truly delicious! I cut the chicken breast in half horizontally and marinate at least 24 hours!! YUM YUM YUM!!
I only marinated this for about 5 hours, but it was so tough and I believe it was from the lemon juice. I followed the directions exactly too….not sure what happened. The flavor was very good.
What a great tasting, easy and fast recipe. The chicken was juicy, flavorful and light! I served it over lemon zest parmigiano bow tie pasta with light pesto and very little is left over! Next time I will throw into the pasta roasted veggies and roasted garlic pieces too! Can’t wait!
Loved it! I marinated overnight and it came out with a strong lemony taste. If you are looking for just a hint of lemon flavor, this isn’t the recipe for you. If you, like me, happen to love lemons then try this recipe now!

This was a simple and delicious way to jazz up chicken! We only marinated it for 3 hours (in a plastic storage bag instead of in a bowl, so I was worried that the thighs we used wouldn’t absorb the flavors…but they sure did!! We baked them instead of grilling them and then still turned out wonderful! I would use a touch less lemon next time, but that’s just my preference.
