The Famous Texas Cheese Dip

Ingredients

  1. 1 (1-pound) package pasteurized process cheese spread, cubed (1 1/2 packages for a thicker dip)
  2. 1 (10-ounce) can diced tomatoes and green chilies, with liquid

Instructions

  1. Place cheese, tomatoes, and jalapenos and their liquid in small heavy saucepan. Set over low heat and cook, stirring often, about 15 minutes until cheese melts and mixture is smooth, or microwave 5 minutes on HIGH in covered, microwave-safe casserole, stirring once at halftime. Serve warm with corn chips or bite-size broccoli or cauliflower florets, celery, carrot, or zucchini sticks.

This is a good – fast – cheese dip – have made all my life – and that is a long time. Grew up in Texas making this – we used a can of Rotel Tomatoes – diced. Makes it really simple – add cheese – then tortilla chips! Don’t forget that big glass of sweet tea! ENJOY
