Thai Holy Basil Chicken: Pud Ga-Prao Gai Sap

Ingredients

  1. 3 tablespoons canola oil
  2. 1 tablespoon chopped garlic
  3. 1 to 2 tablespoons chopped Thai chile pepper
  4. 8 ounces ground chicken breast
  5. 1/2 cup sliced white mushrooms
  6. 1 1/2 tablespoons fish sauce
  7. 1 tablespoon oyster sauce
  8. 1/2 tablespoon sugar
  9. 1/2 tablespoon sweet soy sauce (optional)
  10. 1/3 cup chicken stock
  11. 1/2 cup sliced red bell pepper (optional)
  12. 1/2 cup Thai holy basil (Ga-Prao)
  13. Salt
  14. Steamed jasmine rice

Instructions

  1. Heat the oil in a large saucepan or wok at high heat. Stir in the chopped garlic and cook until it is golden brown. Add the Thai chile pepper and stir well.
  2. Add the ground chicken and cook it just halfway done. Reduce the heat to medium and add the mushrooms, fish sauce, oyster sauce, sugar, sweet soy sauce, and chicken stock. Mix well.
  3. When all the ingredients are cooked, add the red bell pepper and the Thai holy basil. Mix well and season to taste with salt. Serve over steamed jasmine rice.

I prefer to make this like a soup and put too much boullion in. Eyeballing measurements works for me too. Green peppers, red peppers, I don’t see much difference except in the appearance. Did it once without the Oyster sauce, it was still good. Use Thai basil, the spicy one, if it’s available, otherwise ordinary basil will do. But it does make a difference.

I have to say that I didn’t follow the recipe exactly; I’m prone to eyeballing measurements. But it turned out great! I added yellow bell peppers and red bell peppers, and I served mine as lettuce wraps. Fast, easy, healthy and delicious!!

Only this recipe for this dish gives the exact flavors of what I had in the restaurant. This is a must-try!! U will love it if u like spicy food. I couldnt find the oyster sauce, instead I substituted Shrimp paste. It was awesome!!
