Garlic Roasted Tenderloin

Ingredients

  1. 6 cloves garlic
  2. 2 tablespoons freshly cracked black pepper
  3. 1 tablespoon sea salt
  4. 2 tablespoon prepared horseradish
  5. 5 tablespoons fresh thyme leaves, finely chopped
  6. 1 (4-pound) beef tenderloin, trimmed of all visible fat
  7. Horseradish Cream, recipe follows
  8. 1/3 cup prepared horseradish
  9. 1/3 cup non-fat yogurt
  10. 1/3 cup buttermilk

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a small food processor, puree the garlic, pepper, salt, horseradish, and thyme until smooth. Place the tenderloin on a clean work surface and cover evenly with the horseradish paste.
  3. Place the coated tenderloin on a roasting rack. Roast for 30 minutes or until meat thermometer registers 140 degrees F. Remove from the oven and let rest for 5 minutes. Slice and serve warm with horseradish cream.
  4. In a small bowl, mix the horseradish, yogurt, and buttermilk. Cover and place in refrigerator for at least 30 minutes.
