Ingredients
- 7 large eggs
- 1 tablespoon vanilla extract
- 3/4 cup sugar
- 1/2 cup flour
- 1 1/2 teaspoon baking powder
- 2 tablespoons unsalted butter
- 3 golden delicious apples, peeled if desired, cored and cut into 1/2 inch wedges
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons sugar
- 1 tablespoon confectioners’ sugar
- 1/4 cup creme fraiche
- 1 cup sliced strawberries, for garnish (optional)
Instructions
- In a blender, combine the eggs, vanilla, and sugar and blend for about 15 seconds, until combined. Add the flour and the baking powder and mix for 60 seconds more, until very smooth. Preheat the broiler to medium-high heat. Heat a 12-inch non-stick skillet over medium heat and add the butter. Saute the apples for 4 to 5 minutes, or until softened. Add the cinnamon and the sugar, sprinkling them evenly over the apples, and stir together for 2 minutes more, until the apples are glazed and slightly translucent at the edges. Distribute the apples evenly in the skillet and pour the batter over them. Cook until the bottom seems quite firm, about 8 minutes. Transfer the pan to the broiler and, watching carefully, cook until the pancake is firm throughout and golden on top. Cut the pancake into 4 wedges and transfer them upside down to breakfast plates. Sprinkle with a little confectioners’ sugar, place a dollop of creme fraiche on the top, and fan out some sliced strawberries on the plate, if desired.

Terrible baking directions!
I don’t know what I did wrong, but it did not come out puffed up. It almost burned. I caught is after about 5 minutes and turned down the heat to 350 and continued cooking for awhile. It tasted delicious and would make it again. I’m sure I must have done something wrong.

Very simple recipe for a stand out breakfast item. We substituted granny smith apples and found they stood up in this recipe well.
It turned out delicious, and it made the whole house smell wonderful! I had to tweak it a little for a gluten-free flour version, and I used the convection oven at 425 instead of a broiler. Also, I made it in a (well-seasoned cast-iron skillet and it didn’t stick, so I don’t think a non-stick pan is really a requirement.
Delicious and so easy to make! Even my 2yr old picky eater loved this. I’ll be making this again!
It was hard to tell when it was cooked through. I had to move it away form the broiler so it didn’t burn. The flavor was good but quite eggy. With the burner on medium the cinnamon sugar burned a bit so maybe a lower burner temperature might be better. Overall, not bad but I think I’ll look for a new recipe to try.
Unfortunately, I didn’t have good baking apples, but it still tasted great and was extreemly easy and quick to make!
