Ingredients
- 3 tablespoons olive oil
- 1 pound grouper fillets
- 1/2 onion, finely chopped
- 1 1/2 cups chopped canned tomatoes
- 1/2 cup pitted cured black olives
- 3 tablespoons parsley
- Dash of red pepper flakes
- Salt and pepper
Instructions
- In a large skillet heat 2 tablespoons olive oil over medium high heat. Pat fillets dry and season with black pepper. Carefully place fillets in pan and quickly brown on both sides. Transfer to baking dish and place in 200 degree oven and bake for 10 to12 minutes.
- Add 1 tablespoon olive oil to same pan and cook onion for 1 minute. Stir in garlic and cook for 30 seconds. Add tomatoes and stir to combine. Bring to a simmer and cook for 3 to 4 minutes. Stir in olives, parsley and red pepper flakes.
- Remove fish from oven and place on serving plates. Top with sauce and serve with parsley- buttered noodles

This is a good base recipe and easy to change up. When I made it last, I broiled talapia topped with butter, salt and pepper while making the sauce. When making the sauce, I omitted the onions, used a can of fire roasted tomatoes and added a bit of white wine while reducing the sauce. Then stirred in some freshly chopped oregano just before serving.
I served the fish and sauce over orzo that I cooked earlier then warmed in a quick butter, shallot and white wine sauce. Topped with a bit of feta and more oregano this dish was a real hit with my husband.

My wife and I enjoyed the meal very much. We needed to modify it though. The temp. was too low and we added garlic to our liking ( No amount was given so we added 3 cloves). We used a long grain Mediterranean rice recipe as a side dish. Raise the temp to at least 350 for 10-15 minutes for 1.5 – 2 lbs of fish or put the fish under the broiler for less than 10 minutes.
I cooked this recipe for my family and they all loved it. My only problems, the fish needed to cook longer and on a higher heat. Putting it under the boiler was a good idea, thanks to my boyfriend. I added some herbs de provence and lavender to the sauce … delicious!
