Grilled Mackerel with Toasted Garlic Butter

Ingredients

  1. 2 medium mackerel, filleted, skin on
  2. 5 garlic cloves, smashed
  3. 4 ounces butter
  4. Salt
  5. Pepper
  6. 1 or 2 limes

Instructions

  1. Preheat an outdoor grill to medium heat and oil the grates with a brush or towel.
  2. In a small saucepan, melt the butter and add the smashed garlic.
  3. Make 3 deep cuts on each side of the fish. Season fillets generously with salt and pepper. Place flesh side-down and cook for 2 to 3 minutes. Flip fish over and cook for an additional 2 to 3 minutes. Remove from grill and brush with some of the garlic butter (about 2 tablespoons).
  4. Squeeze 1/2 of a lime over each fillet and serve immediately.

Made this tonight with a fresh side of King Mackerel a friend caught last night. Only used a spritz from half a lime and it was more than enough. Fantastic! My husband, who is sometimes leery of fish, texted our friend to tell us he can drop off more mackerel whenever he catches one! Paired with fresh string beans from the garden and some cheddar broccoli rice.

Definitely recommend using aluminum foil or a grill mat because this will definitely flake and you may lose some fish to the fire gods.

We really enjoy a great fresh fish dinner. Even our grandchildren know breaded fish from the frozen food section isn’t any good and there as many taste in fish as there in vegetables.
We bought a wonderful Spanish Mackerel from the monger, fired up the stove and put on the grill. In less that 10 minutes we were sitting down to wonderful , easy, quick and very delicious meal.
