Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 pound blue cheese
- Kosher salt
- Freshly ground black pepper
- 2 tablespoons olive oil
- 1 stick unsalted butter
- 2 tablespoons hot sauce (recommended: Frank’s Hot Sauce)
- 2 tablespoons white vinegar
- Celery, sliced thin, to serve
Instructions
- Heat the oven to 350 degrees F.
- Using a sharp knife, cut a pocket into each chicken breast. Stuff 1/4 of the blue cheese into each breast. Secure the openings with toothpicks and season with salt and pepper. Heat the oil in a nonstick, oven-proof skillet over medium heat and sear the chicken on both sides until browned, about 3 to 4 minutes per side. Put the chicken into the oven until it is cooked through, about 8 to 10 minutes.
- In a small pot, add the butter, hot sauce, and white vinegar and cook over medium heat until bubbling. Pour half the sauce over the hot chicken and cook over medium heat for 1 minute. Remove the toothpicks and serve with extra sauce garnished with sliced celery.

Do you think I can slice the celery small and add that into the stuffing?
Good recipe! I didn’t have any Blue cheese so I stuff the chicken with cheddar. I used Frank’s chicken wing sauce w/ 3 TBS butter and some garlic powder. Served over lettuce wedge with sauce and blue cheese. Yummy! Thank you for the recipe!

Loved this though I did make a few changes. When making the sauce I used franks buffalo sauce bout half a bottle then 1/3 bottle ranch and half a bar of cream cheese. This makes it real creamy but still hot and I also used cheddar cheese with ranch seasoning. Fantastic
DH gave it two thumbs up and asked for it again soon. That’s the highest compliment it could get. I loved it as well and appreciate that it isn’t too spicy.

Absolutely loved this recipe. I like my buffalo chicken spicy, so I added a lot more hot sauce and filled the chicken with as much blue cheese as possible. Definitely a staple from now on.
This is a wonderful recipe!! My boyfriend can’t stand blue cheese but he loved it with the hot sauce. Once the cheese mixes in with the sauce it takes a lot of the heat away so we used less butter and more hot sauce to get a more spicy effect. BTW Frank’s Hot Sauce must be used! It’s so good. If you have any leftovers be sure to put more sauce over the chicken when you refrigerate. It will keep the chicken moist. The leftovers were just as good the next day as the dinner the night before. We’ve made this dish twice in two weeks and we are planning on making it again this weekend.
I made this as a healthier version of chicken wings for a Sunday football game and followed the recipe to a “T”. Not only did the men in my house love it(as did I, they asked me how I came up with such a great idea. We had a lot of extra bleu cheese to use up…kind of went overboard shopping on Arthur Avenue.
I served it with celery and carrots and extra bleu cheese on the side…no one used the extra bleu cheese. Yummy!! I’m making this again tonight!
