Bologna and Cheese Salad

Ingredients

  1. 1/2 cup extra-virgin olive oil
  2. 2 tablespoons Baynols vinegar
  3. 1 tablespoon lemon juice
  4. Sea salt and freshly cracked black pepper
  5. 1 head radicchio
  6. 1 head endive
  7. 2 cups arugula
  8. 1 cup toasted pine nuts
  9. Vegetable oil
  10. 8 slices mortadella
  11. 6 ounces Gorgonzola

Instructions

  1. In a small bowl, whisk together oil, vinegar, and lemon juice. Season with salt and pepper and place in refrigerator. Roughly chop all lettuces and place in bowl. Lightly toss in the pine nuts. Heat oil in saute pan over low heat. While oil warms, spread mortadella into individual sheets. Place dollop (little less than an ounce) of Gorgonzola in the center of each slice and fold mortadella up and around the cheese to form a package. Twist once, and insert toothpick to hold bundle in place. Place the packages in the saute pan and cook about 2 minutes until crispy. Flip and cook 2 minutes more. Remove to paper towel lined plate. Keep warm.
  2. Pour vinaigrette over salad and toss gently with fingertips. Divide salad between 4 places. Place 2 meat parcels on top and crack fresh black pepper over each plate.

don’t be blinded to the forest for the trees! this is merely lettuce, lunchmeat, and cheese, with dressing. use lettuce YOU like, use lunchmeat YOU like (mortadella is a good choice, easily available to most and not prohibitively expensive). I’m not partial to arugula (grew it in the garden and had ready access to tender young leaves, on thru; just a harsh lettuce), radicchio i like as a complementary lettuce, but it is too expensive. As for dressing, use any italian dressing you like- your own or storebought! Now enjoy. They’ve given us the idea, and we’ve put in OUR favorite ingredients!!

It’s too bad Helen decided to give this one star without trying it because it didn’t sound dull enough for her. I don’t understand the “not comforting” comment. This wasn’t a comfort food challenge; it’s an Italian food challenge.
