Ingredients

  1. 2 cups couscous
  2. 2 cups water
  3. 1 tablespoon butter
  4. Salt and pepper
  5. 1/2 bunch scallion, finely sliced
  6. 1/4 cup fine diced Spanish onion
  7. 1 to 2 tablespoons rice wine vinegar

Instructions

  1. Bring water, 1 tablespoon salt, and butter to a boil. Add couscous, remove from heat and stir quickly and thoroughly. Cover for 5 minutes. Moisture will be absorbed. Fluff with a fork. Add scallions, Spanish onion and rice wine vinegar.
