Hockaday Chess Pie

Ingredients

  1. 3 cups sugar
  2. 1 1/2 ounces cornmeal
  3. 1/2 pound (2 sticks) margarine or butter, melted
  4. 6 eggs
  5. 2 teaspoons vanilla extract
  6. 1/2 cup milk
  7. 2 teaspoons vinegar
  8. 2 unbaked pie shells in pie pans

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix sugar and cornmeal. Add melted margarine and mix thoroughly.
  3. Add eggs, 1 at a time, mixing after each addition. Add all liquids, taking care to end with vinegar. Mix well. Divide filling among each unbaked pie shell. Bake for approximately 45 minutes.

It only takes 1 stick of butter for this, It will not setup if you use the amount listed. Other than that it is wonderful.. Made them for a Veterans meeting& many of them had never eaten chess pie. They were back for seconds.

Made this for years. Can add lemon ext for Lemon chess or maple extract for a fall favorite. Sometimes I add half a can of pumpkin pie mix to it to make a pumpkin chess that is awesome for Thanksgiving.

I liked that this recipe, it is simple and easy. I substituted a few items, I used evaporated milk and rice vinegar simply because this is what I had available.

This is a great recipie, the flavor is really great but just make sure that you use deep dish pans because the pie will rise and run over the pie pan if you use regular pie pans. Other than that no problem with the recipie. Very simple to make.
