Creamy Polenta with Smoked Gouda

Ingredients

  1. 1 cup cold water
  2. 1 cup yellow cornmeal
  3. 3 cups chicken broth or water
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon ground black pepper
  6. 1/2 cup grated smoked Gouda

Instructions

  1. In a small bowl, combine cold water and cornmeal. Let stand 5 minutes. Meanwhile, in a medium saucepan over medium-high heat, combine chicken broth, salt and pepper. Bring mixture to a boil. Gradually whisk in cornmeal mixture and reduce heat to low. Cook 20 minutes, stirring frequently with a wire whisk, until mixture is thick and creamy. Stir in smoked Gouda and simmer until cheese melts, stirring constantly.

Love it!
I make it with normal gouda though since I’ve had a little trouble fining the smoked in my area. and i always add too much of it 😉

I’m not sure if there was too much polenta…but this was so bland and gross. I didn’t use smoked gouda, but regular…which shouldn’t have made a huge difference. I kept the leftovers to see if I could play with it and add stuff so it could get some flavor! Yuck!
