Ingredients
- 1 packet 25-calorie hot cocoa mix
- 1/2 (18 1/4-ounce) box devil’s food cake mix (about 1 3/4 cups)
- 1/2 cup fat-free liquid egg substitute
- 1 tablespoon no-calorie granulated sweetener (recommended: Splenda) or granulated sugar
- 1/8 teaspoon salt
- 1/4 cup jet-puffed marshmallow creme
- 1 teaspoon light vanilla soymilk
- 1 tablespoon mini semi-sweet chocolate chips, plus more, for optional garnish
- 12 mini marshmallows, plus more for garnish, optional
Instructions
- Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with foil baking cups and/or spray with nonstick spray.
- For the cupcakes:
- In a tall glass, combine cocoa mix with 2 ounces hot water. Stir until cocoa dissolves. Add 6 ounces cold water and stir well.
- In a large mixing bowl, combine cake mix, egg substitute, sweetener, and salt. Add cocoa mixture and whisk until smooth.
- Evenly distribute cake mixture among the prepared muffin cups.
- Bake in the oven for about 15 minutes, until a toothpick inserted into the center of a cupcake comes out clean. Remove from oven and let cool.
- To make the glaze:
- Put the marshmallow creme in a small dish. Add soymilk and mix well.
- Once the cupcakes have cooled completely, drizzle marshmallow glaze over them. Top each cupcake with 1/4 teaspoon chocolate chips and one mini marshmallow.
- Refrigerate until ready to serve. Garnish the cupcakes with additional chocolate chips and marshmallows, if using.

Yum! These were yummy! Even my sister, who is not very healthy loved them! The only issue I had was my icing melted, I used 1 percent milk, instead, because I did not have fat free or soy. Could the type of milk I used have something to do with it? They were fine for a while but by the next day the icing was completely gone.
I made these cupcakes with my 8 year old twins…what a fun recipe to do with kids. They loved decorating them. They were delish and you would never know that they are lo cal! The only problem I had was with the marshmallow creme. I couldn’t get the right consistency. But they were wonderful anyway and I would make them again for any occasion. Hungry Girl, I LOVE your show and simple, yummy and easy recipes like this one!

We were thrilled to find such an easy and delicious recipe! Our 16 year old daughter was just successful this summer at wellness camp losing a significant amount of weight, and our entire family is now following a low fat, lower calorie diet packed with fresh fruits, veggies and lean meats. These cupcakes are moist and do not taste “diet” at all and would be perfect for parties, potlucks, etc. Highly recommend!!!

Laverne, the latest thing I have heard on being overweight is that it’s just as unhealthy as smoking cigarettes. I prefer to occasionally use sugar substitute and other “chemicals” to help me lose weight, and by the way, both my physician and my nutritionist recommended the use of artificial sweeteners. I’ve already lost 21 pounds – only have 12 more to go – using Splenda helped me get where I am. No one is saying you have to use sweeteners. If you can come up with dessert recipes that are tasty and also low in calories and fat, I’d love to see it.
