O Christmas Tree

  4.3 – 3 reviews  • Christmas
Browse the produce aisle and you’ll find that there’s a bunch of jewel-toned fruits and vegetables fit for decorating a Christmas tree. I like to use multicolored bell peppers and pomegranate seeds, but you can use whatever you’re inspired by. Star fruit, of course, is the natural choice for a tree-topper.
Level: Easy
Total: 2 hr 30 min
Active: 30 min
Yield: 12 to 15 servings

Ingredients

  1. 16 ounces cream cheese, softened
  2. 2 tablespoons chopped mixed fresh herbs, such as dill, oregano, and/or thyme
  3. 2 garlic cloves, minced
  4. 1 teaspoon Dijon mustard
  5. 1/2 teaspoon coarse salt
  6. 1 bunch fresh parsley, chopped, for coating
  7. Red, orange, or yellow bell pepper bits, 1 slice star fruit, and pomegranate seeds, for decorating
  8. Crackers and crudites, for serving

Instructions

  1. Using a stand mixer or a bowl and a spatula, mix together the cream cheese, herbs, garlic, mustard, and salt until combined. Form the mixture into a ball, cover with plastic wrap, and refrigerate for at least 2 hours or overnight.
  2. Before serving, form the ball into a tree shape — like an egg shape, but pointier on top. Roll the tree-shaped ball in the parsley, reshaping it with your hands as necessary. Decorate with bits of bell peppers and pomegranate seeds. Top with the slice of star fruit.
  3. Serve with crackers and crudites.

So delicious and easy to make! I was asked to bring an appetizer to our Christmas gathering. I got so many compliments! I saw that you can also shape it like a pumpkin so guess what I’m bringing for Thanksgiving!!!
