Spiced Chicken with Apples

Ingredients

  1. 4 skinless, boneless chicken breasts (about 6 ounces each)
  2. 1/2 teaspoon ground allspice
  3. 1/4 teaspoon turmeric
  4. Kosher salt and freshly ground black pepper
  5. 2 tablespoons plus 2 teaspoons extra-virgin olive oil
  6. 2 Gala apples, cut into wedges
  7. 1 red onion, sliced
  8. Juice of 1 lemon
  9. 1/2 cup low-sodium chicken broth
  10. 2 cloves garlic, minced
  11. 1 bunch Swiss chard, chopped (stems and leaves separated)

Instructions

  1. Season the chicken with the allspice, turmeric, 1/2 teaspoon salt and a few grinds of pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until browned, 3 to 4 minutes per side. Transfer to a plate; set aside. 
  2. Add the apples, onion and a pinch of salt to the skillet. Cook, stirring occasionally, until softened and lightly browned, about 4 minutes. Add the lemon juice to the skillet and cook, scraping up any browned bits, 30 seconds. Add the chicken broth and bring to a boil, then reduce the heat to maintain a simmer. Arrange the chicken on top of the apple mixture. Cover and cook until the chicken is cooked through and the sauce is slightly reduced, 6 to 9 minutes. 
  3. Meanwhile, heat the remaining 1 tablespoon plus 2 teaspoons olive oil in a separate large nonstick skillet over medium-high heat. Add the garlic and cook, stirring, until golden, about 30 seconds. Add the chard stems and season with salt and pepper. Cook, stirring, until softened, 3 minutes. Add the chard leaves; cook, stirring, until wilted, about 2 minutes. Serve with the chicken and apples.

Good recipe. I used granny Smith apples and added more cinnamon or make it less sweet and less bland

Made according to the recipe. The sweetness can be altered depending on the sugar/starch content of the apple used, but I found the sweetness of Gala to be to my liking. The sweetness balanced out the sharp bitterness of the chard nicely and the chicken was flavorful and perfectly moist cooked this way. Will definitely make again.

Very good. My husband saw this recipe and asked me to cook it for dinner. I read the reviews and decided to add to the recipe. I marinated the chicken with the seasonings and added a tablespoon of olive oil, Mrs Dash garlic and herb seasoning and Goya seasoning for about an hour in the fridge. I follow a couple of reviewers and and added butter and Cayenne pepper. I also added a pat of butter the chard. My husband said he would have added red pepper flakes. He enjoyed the dish.

We did not enjoy this. Apples are too sweet for us for dinner, and are more appropriate as a snack or for dessert.

This was a great light and healthy fall dinner.  We enjoyed it!  I only used half a lemon since I’m not a fan of lemon chicken and went a little heavier on the spices too. Added a tablespoon of butter to the apples and onions.  Delish!

The chicken came out very bland. The only thing my family liked was the Swiss chard. Sadly I Won’t be making this again.
