Ingredients

  1. 1 hero roll (about 4 ounces), cut into 1-inch cubes
  2. 1/3 cup plus 1 tablespoon extra-virgin olive oil
  3. 1 teaspoon Italian seasoning
  4. Freshly ground pepper
  5. 3 tablespoons red wine vinegar
  6. Kosher salt
  7. 1/2 small red onion, very thinly sliced
  8. 1 pint cherry or grape tomatoes, halved
  9. 3 romaine hearts, chopped
  10. 4 ounces provolone cheese, diced
  11. 3/4 pound sliced Italian meats (such as mortadella, prosciutto, salami and/or soppressata)
  12. Giardiniera, jarred roasted red peppers, marinated mushrooms, marinated artichokes and/or pickled pepperoncini, for serving
  13. Grated Parmesan cheese, for topping

Instructions

  1. Preheat the oven to 375 degrees F. Toss the hero roll cubes on a rimmed baking sheet with 1 tablespoon olive oil, 1/2 teaspoon Italian seasoning and 1/2 teaspoon pepper until well coated. Bake until golden and very crisp, about 12 minutes. Set aside.
  2. Meanwhile, whisk together the remaining 1/3 cup olive oil and 1/2 teaspoon Italian seasoning, the vinegar and a pinch each of salt and pepper in a medium bowl. Toss the red onion and tomatoes in 2 separate small bowls with 1 tablespoon of the vinaigrette each. Toss the romaine in a bowl with the remaining vinaigrette and season with salt and pepper.
  3. Divide the romaine among serving bowls. Add the croutons, tomatoes, red onion, provolone and meat to the bowls. Serve with pickled and marinated vegetables and top with grated Parmesan.
