Ingredients
- 2 slices raisin bread
- peanut butter
- ½ banana, sliced
- 2 tablespoons chocolate chips, or to taste
- ¼ cup ricotta cheese
- 1 tablespoon white sugar
- 1 dash ground cinnamon (Optional)
Instructions
- Toast raisin bread in a toaster oven until lightly brown, 2 to 3 minutes.
- Spread peanut butter onto toasted bread. Top 1 slice with banana; top other slice with chocolate chips. Cover banana and chocolate chips with ricotta cheese. Sprinkle sugar and cinnamon on top.
- Toast in the toaster oven just until cheese is melted, 3 to 5 minutes. Sandwich slices together.
- Toaster waffles can be substituted for the raisin toast.
- Cottage cheese can be used instead of ricotta cheese.
- This sandwich can be made under a broiler instead of in a toaster oven if desired.
Reviews
This sandwich was OK, probably not something I would repeat. I only used maybe 1/2 T of chocolate chips and just a sprinkling of a cinnamon sugar mixture instead of a full tablespoon of sugar. I thought it was plenty sweet with the bananas and peanut butter and all the extra sugar wasn’t needed. I toasted this in the broiler for 5 minutes. I found myself thinking it needed to be “chunky” since it is called “Chunky Monkey”– I think chunky peanut butter would be good on this.
