Cheesy Cornbread Muffins

Ingredients

  1. Nonstick cooking spray, for the muffin tin
  2. 1 1/3 cups yellow cornmeal
  3. 2/3 cup all-purpose flour
  4. 2 teaspoons baking powder
  5. 1 teaspoon baking soda
  6. 1 teaspoon kosher salt
  7. 1 cup buttermilk
  8. 2 large eggs, whisked
  9. 1 1/2 cups grated sharp Cheddar
  10. One 4-ounce cans green chiles
  11. 6 tablespoons salted butter, melted
  12. 8 tablespoons salted butter, softened
  13. 3 tablespoons honey

Instructions

  1. For the muffins: Preheat the oven to 425 degrees F. Prepare a muffin tin with cooking spray.
  2. Stir together the cornmeal, flour, baking powder, baking soda and salt in a large bowl.
  3. Add the buttermilk and eggs to a small pitcher and stir to combine. Pour the buttermilk mixture into the dry ingredients. Stir with a fork until combined. Fold in the cheese, green chiles and melted butter until just combined.
  4. Portion the batter into the prepared muffin tin and bake until they are cooked through, about 15 minutes.
  5. For the honey butter: Mix the butter and honey in a bowl until combined. Transfer to a ramekin. Remove the muffins from the oven, allow to cool a little, then break open and spread with the honey butter.

My family & I love these! I think that those that think they don’t have much flavor must like sugar in their cornbread.

I made these yesterday, and while good, they really had not much taste for me. Now my Husband just loved them but he had the advantage of the honey butter ( which I did not as I am a diabetic) so that could have been the difference. He gave them a thumbs up….and the recipe a “keeper”.

I made this recipe to go with the chili from her most recent stay at home episode. While easy to make, they had absolutely no flavor. All that cheese and chili’s, yet no flavor. The recipe needs to be tested and corrected.

i live in the south but have never liked cornbread- this one is great!  The higher concentration of corn meal to flour is great as well as not adding sugar to the muffins.  THe honey butter adds as much sugar or as little as you want. Thanks Ree, again.
