BBQ Cheese Straws

Ingredients

  1. 1 1/2 cups coarsely grated extra-sharp Cheddar
  2. 1 cup unbleached all-purpose flour, plus more for dusting
  3. 3/4 stick cold unsalted butter, cut into tablespoons
  4. 1/2 teaspoon salt
  5. 1 tablespoon BBQ seasoning mix
  6. 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 350 degrees F with the racks in the upper and lower thirds of the oven. Line 2 sheet pans with parchment paper and set aside.
  2. Add the cheese, flour, butter, salt and BBQ mix to the bowl of a food processor and pulse until the mixture resembles coarse meal. Add the cream and pulse until a ball forms.
  3. On a lightly floured work surface, roll the dough out to 1/4 to 1/8-inch thick. Cut the dough with a sharp knife into 1/4-inch wide strips. Transfer to the prepared sheet pans, leaving space between them, and bake until golden brown, about 15 minutes. Flip the pans once halfway through the cooking time. Cool completely on the sheet pans.
  4. BYOC: If your friends are the spicy type, try adding a pinch or 2 of cayenne. If you want to get the kids involved, omit the BBQ spice, have them paint the straws with egg wash before you bake them and add some sesame seeds or poppy seeds.

I’ve made these delicious straws twice now. Both times, the dough seemed a bit dry and crumbly, but rolled out fairly well. I cut the individual straws with a pizza cutter which gave fine results. Once cut, the straws were very fragile. They baked nicely, but since they are somewhat brown to begin with, they were done before they browned further. Once bakeg, the straws were still very fragile. They had a wonderful flavor and were loved by all. Were they a little more sturdy, this would be a 5-star recipe. Thanks, Ms. Robinson!

Very tasty and easy to make. If I hadn’t watched to show I would have thought something was wrong when I had all the ingredients together in the food processor- looks fall apart but rolls out nicely. When cooled sticks stand up nicely for serving.

OMG! You’ve done it again.
Although, I did play just a little BYOC, my family and friend licked the plate and begged for more.
My BYOC substitution:
1 tbsp of ground sesame seeds plus 1/2 tsp pepper for the 1 tbsp of BBQ Seasoning mix, and then followed your suggestion for the egg wash & sesame seeds. Rave reviews for both of us.
