Fast Succotash

Ingredients

  1. 4 strips thick-cut bacon, chopped
  2. 1 green bell pepper, chopped
  3. 1 clove garlic, minced
  4. 1 (16-ounce) bag frozen corn
  5. 1 (16-ounce) bag frozen lima beans
  6. 1 (10-ounce bag) frozen pearl onions
  7. 1 teaspoon hot sauce (recommended: Frank’s Red Hot)
  8. 1/3 cup heavy cream
  9. Salt and freshly ground black pepper

Instructions

  1. In a large skillet fry bacon until crispy and remove to a paper towel-lined plate, reserving fat in pan. To the skillet add the bell pepper and garlic and cook until softened slightly, about 5 minutes. Add corn, lima beans, pearl onions, hot sauce and cream. Bring to a simmer and cook until vegetables are thawed and tender. Stir in reserved bacon and season with salt and pepper.

I really loved this succotash. Couldn’t find frozen pearl onions, so I used fresh and put them in pot from the beginning. It was delicious! I’d never added bacon to succotash, and it’s a welcome addition. And it really is easy, so I will be making it often. Thanks, Sunny!

I left out the lima beans, cream, hot sauce. Subbed ham for bacon, canned corn for fresh, and used a fresh onion. Tastes fine to me. Sunny rocks!

This is a really good succotash. The one change I make is to cook my lima beans for a little while in the southern fashion–with smoked meat that had been allowed to boil in (lightly) salted water. Then, I follow her directions. Otherwise, it takes the lima beans too long to get tender (as I learned the first time I attempted this).

This dish was very dry and had a grainy texture. Maybe it was the limas. I’ve never really cared for those. Husband nor Mom cared for this. Mom said there was no juiceyness to it and the okra should have been sauted in with the rest of the veggies, instead of frying. Won’t be cooking this again.

My first time to make succotash – it was so yummy! Followed the recipe as given. Very delicious! I added fresh cut tomatoes because Sunny did in the episode I watched. They were a great addition but next time I will add them at the end!

To the previous reviewer – The cream, hot sauce (and salt/pepper) were just put in
the wrong spot. The first line of the directions contains the amounts of the “missing” ingredients. This succotash is great. For those not in love with hot sauce, just substitute fresh thyme.

I find the reviews a bit fishy since they all mention cream and hot sauce. The recipe doesn’t have hot sauce or cream listed in the ingredients. Are those real reviews? I’ll give this a try and add some cream and hot sauce.
