Ingredients

  1. 1 whole boneless, skinless chicken breast
  2. Olive oil, as needed
  3. 2 teaspoons chopped fresh rosemary leaves
  4. Kosher salt and freshly ground black pepper
  5. 6 to 8 plum tomatoes, cored
  6. Olive oil, as needed
  7. Kosher salt and freshly ground black pepper
  8. 2 (6-inch) loaves ciabatta bread, or your favorite long and crusty bread, halved lengthwise
  9. About 6 (1/4-inch thick) slices mozzarella
  10. 2 teaspoons chopped fresh rosemary
  11. Kosher salt and freshly ground black pepper

Instructions

  1. Make the chicken: Using a knife, butterfly the chicken and pound thin between 2 layers of plastic wrap. Transfer the chicken to a shallow dish, drizzle with olive oil, and sprinkle with the rosemary. Season the chicken with salt and pepper and refrigerate for at least 2 hours and up to 2 days. When ready to cook, preheat a grill. Grill the chicken, turning once, until just cooked through.
  2. Make the tomatoes: Preheat the oven to 250 degrees F.
  3. Using a small knife, score the ends of the tomatoes, drop them in a pot of boiling water, and cook briefly, about 20 seconds. Using a slotted spoon, transfer the tomatoes to a bowl of ice water to stop the cooking. Peel off the tomato skins and cut the tomatoes in 1/2 lengthwise. In a small bowl, toss the tomatoes with olive oil and season with salt and pepper. Arrange the tomatoes on a baking sheet, cut-side up, and bake until lightly browned and somewhat dried, about 3 hours.
  4. Make the sandwiches: Preheat an electric sandwich press or grill. Layer the chicken, tomato, and mozzarella between the bread, sprinkle with rosemary and season with salt and pepper. Put the sandwiches in the press and cook until hot and crispy.

Delish!! Clearly, I didn’t read the recipe ahead of time so I had to adapt. Marinated chicken for only about 45 minutes. Roasted tomatoes at 400 for 40 min instead of 3 hours. Still turned out DELISH!! I was worried since it didn’t include any condiments, but it was moist, flavorful and a BIG HIT at my dinner! Will make this again!!

Number one on my list of sandwiches. My mouth was watering while the instruction was given. Top on my list of sandwiches. Thanks for sharing.

This has to be the easiest and most flavorful sandwich I have ever had. Even my husband who hates tomatos on sandwiches loved this.

I like a little more flavor then this gave me.
