Pecan-Bacon Squares a la Mode

Ingredients

  1. 6 tablespoons cold unsalted butter, diced, plus more for the baking dish
  2. 1 1/4 cups all-purpose flour
  3. 1/4 cup sugar
  4. Pinch of kosher salt
  5. 2 teaspoons fresh lemon juice
  6. 8 slices bacon, diced
  7. 3 large eggs
  8. 1 cup light corn syrup
  9. 1/3 cup sugar
  10. 5 tablespoons unsalted butter, melted
  11. 1 teaspoon vanilla extract
  12. 1/2 teaspoon apple cider vinegar
  13. 1 cup pecans, plus more for topping
  14. Vanilla ice cream, for serving

Instructions

  1. Make the crust: Preheat the oven to 375 degrees F. Butter an 8-inch-square baking dish and line with nonstick foil, leaving an overhang on 2 sides. Lightly butter the foil.
  2. Combine the flour, sugar and salt in a food processor and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal. Add the lemon juice and pulse until the dough just comes together. Press the dough into the bottom of the prepared baking dish and bake until lightly golden, about 15 minutes.
  3. Meanwhile, make the filling: Cook the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 8 minutes; drain on paper towels. Whisk the eggs, corn syrup, sugar, melted butter, vanilla and vinegar in a medium bowl until combined.
  4. Scatter the pecans and bacon over the prepared crust, then pour in the filling. Bake until the filling is set and the nuts are golden brown, 30 to 35 minutes. Let cool completely in the pan on a rack, then lift out of the pan using the overhanging foil. Cut into squares and top with ice cream and more pecans.

Followed the directions exactly and it came out perfectly. It was delicious, warm, with ice cream on top but it was even better at room temperature. Definitely for bacon lovers!

Really Good! It was ooey gooey and delicious with the ice cream. I added toasted pecan “sprinkles” and fresh bacon pieces.

These were awful 🙁 I didn’t think it was possible but there’s too much bacon! It overpowered all the other flavors. Baked exactly as instucted but the top and edges burned before the filling ever set. I’m so disappointed!

Amazingly yummy. Though I followed the directions exactly, it took twice as long to bake in order for the filling to fully set. It didn’t burn, which is good. Just curious as to why that may have happened.
