Instructions
- Boil 1 pound quartered, peeled Yukon gold potatoes in salted water until tender. Reserve 1/4 cup cooking water, then drain. Saute 2 cups shredded cabbage in butter, 2 minutes. Add the reserved cooking water, cover and cook 3 minutes. Add the potatoes, 4 sliced scallions, 1/2 cup half-and-half, 2 tablespoons butter and a pinch of nutmeg. Mash until smooth. Season with salt and pepper.

One of my favorite dishes growing up. Brown pork chops. Deglaze skillet with small amount of water. Make well in bowl of potatoes. Pour drippings in well. Lots of black bread and butter.
I was surprised how well the cabbage and potatoes worked together. The flavor was excellent.
This recipe is delicious. I received Yukon gold potatoes, cabbage and scallions in my CSA harvest box this week and this recipe was the perfect way to use them. I sautéed the scallions with the cabbage and left the skins on the potatoes but didn’t change anything else. Yum!
My wife and I were very pleasantly surprised by this. I sautéed the cabbage just until it started to caramelize and turn brown on the edges. I tasted a touch of sweetness because of that. The sweetness mixed with the green onions was a wonderful combination. It was a bit different having to do a little bit of chewing for mashed potatoes, but the unusualness of that quickly disappeared. We definitely plan on making this again!
I thought this dish was so delicious that I just had to register on this site so I could comment here (especially after reading that 1 star comment. I followed the recipe but I had a small amount of lean ground beef that needed to be used so added that in as well. The only other thing I did differently was mash the potatoes first, then add the cabbage & ground beef and mix everything together. The sauteed cabbage was so yummy that I made a little extra as a side dish and the whole thing made a scrumptious meal! This dish will be my new “Comfort Food”!
I thought this might be a unique pairing of flavors and sounded like it could be different and yummy. I couldn’t have been more wrong; I thought the sauteing of the cabbage could be wonderful – it was awful. My husband loves new things and also HATED it (nevermind my pre-teen kids. Horrible, horrible. We threw away the leftovers.
I would never have thought of putting Cabbage in mashed potatoes but this was simply outstanding. I didn’t change a thing with this recipe and even my picky 9-yr old who doesn’t like mashed potatoes loved this one. Keeper.
