Turkey and Veggie Meatloaf Minis

Ingredients

  1. 1 small onion
  2. 1 1/4 pounds raw lean ground turkey
  3. 3 cups bagged dry broccoli cole slaw, roughly chopped
  4. 1/2 cup quick-cooking oats
  5. 2 teaspoons garlic powder
  6. 1 teaspoon salt
  7. 1/2 cup fat-free liquid egg substitute
  8. 1/4 cup, plus 3 tablespoons ketchup

Instructions

  1. Preheat oven to 350 degrees F.
  2. Using a box grater, grate the onion into a large bowl. Add turkey, broccoli cole slaw, oats, garlic powder, salt, egg substitute, and 1/4 cup ketchup. Stir until thoroughly mixed.
  3. Line 9 cups of a 12-cup muffin pan with baking cups and/or spray with nonstick spray. Evenly distribute turkey-veggie mixture among the muffin cups, and top each with 1 teaspoon ketchup.
  4. Bake in the oven until firm with lightly browned edges, 30 to 35 minutes. Let stand for 5 minutes before serving. Enjoy!

I used one pound of ground turkey and had to bake for 45 minutes. I couldn’t find broccoli slaw at the store, so used cabbage and carrot slaw. Still delicious! I had enough mixture to make 12 mini meatloafs and decided to go without the muffin liners.

This meatloaf turned out GREAT. I did use 1 egg in place of the egg substitute and I tried using Fire Roasted Sauce in place of the ketchup. We ended up dipping the mini’s in ketchup, so definitely stick with the ketchup. I also added a few red pepper flakes to spice it up a little. For a healthy meal, this is awesome.

I thought this was a great turkey meatloaf. I made it into a single loaf instead of the minis and cooked it in the microwave for 15 minutes instead of the oven. It was juicy and crunchy and very flavorful! I’m looking forward to leftovers tonight!

This is a great recipe for those watching their carbs… Only change I made was I sauteed the onions and broccoli cole slaw mix until soft, I don’t like crunch in my meatloaf… Also I used sugar free ketchup with a tiny amount of brown sugar substitute… These freeze great… Really yummy…

Pretty good! I had to bake mine for about 50 minutes to get the turkey to cook all the way. Also, the next time I make these I think I will use my silicone cupcake liners, as the paper ones I used this time go kind of mushy & made it hard to get out of the pan.

This was a wonderful recipe. I made these for my 3 boys, my girlfriend, her 3 girls and my husband. There were no leftovers. They we moist and delicious.

Excellent recipe. Very moist and tasty. I liked a little extra ketchup on top of them. It made more than the 9.. so the rest of the meatloaf I put in a small dish. That worked good as well. The broccoli colesaw adds a nice crunch factor. This is great for getting veggies in for kids. Definately will make again.
