Ingredients

  1. 1/4 small red onion, finely diced (about 1/4 cup)
  2. 1 small clove garlic, finely chopped (about 1 teaspoon)
  3. 1 small jalapeno pepper, finely diced (about 1 tablespoon)
  4. 2 tablespoons lime juice
  5. Kosher salt
  6. 2 avocados
  7. 2 teaspoons extra-virgin olive oil

Instructions

  1. Combine the onion, garlic, jalapeno, lime juice and 1/2 teaspoon salt in a bowl. Set aside. Peel and pit the avocados and cut into 1/2-inch pieces. Gently stir the avocado and oil into the bowl until the avocado is dressed.
