Ingredients
- 2 tablespoons rice vinegar
- 1/2 cup olive oil
- Salt and freshly ground black pepper
- 2 large ripe tomatoes, cut into wedges
- 2 English cucumbers, peeled and sliced into 1/4-inch thick slices
- 1 papaya, peeled, diced large and seeds reserved
Instructions
- In a mixing bowl whisk vinegar while slowly adding olive oil. Season with salt and pepper and toss with tomatoes, cucumbers, papaya, and papaya seeds. Taste and adjust seasoning.
- Serve family style.

this was the hit of the party…. nevermind the fried rice, shrimp and chicken k-bobs, this was fantastic!! I followed the recipe exactly, figuring next time I can add, subtract, or whatever, but nope, not this one…. good stuff!!
This recipe is great. I used grape tomatoes cut in half and a regular cucumber diced. I did not use the papaya seeds. This recipe is a keeper. Even my fussy husband claimed it was good. Next time I am going to try and cut everything smaller and serve it over a grilled chicken breast.
and so-o good. I love tomatoes and cucumber salad–especially with rice vinegar–so this caught my eye. I was planning a buffet for my parets wedding anniversary, so decided to try this. The bit of sweetness is wonderful. Even leftovers two days later were good. Before I left to come home, Mom asked me to make it again. This time we added a little vidalia onion–that was very good too. This is this summer’s picnic salad.
