Fresh Apricot Cobbler

  4.7 – 39 reviews

We had fruit trees while I was growing up, and each year we had to think of ways to use the extra fruit. My favorite cobbler became this one.

Prep Time: 20 mins
Cook Time: 40 mins
Total Time: 1 hr
Servings: 12
Yield: 12 servings

Ingredients

  1. 1 cup water
  2. ¾ cup white sugar
  3. 1 tablespoon cornstarch
  4. ¼ teaspoon ground cinnamon
  5. ⅛ teaspoon ground nutmeg
  6. 6 cups halved fresh apricots
  7. 1 tablespoon butter
  8. 2 cups all-purpose flour
  9. ¼ cup white sugar
  10. 1 tablespoon baking powder
  11. 1 teaspoon salt
  12. 7 tablespoons butter
  13. 2 tablespoons white sugar
  14. 1 ½ cups milk

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Bring water, 3/4 cup sugar, cornstarch, cinnamon, and nutmeg to a boil; stir until thickened, about 1 minutes. Reduce heat to medium and add apricots and 1 tablespoon butter. Simmer until heated through, about 5 minutes. Transfer mixture to a 9×13-inch baking dish.
  3. Combine flour, 1/4 cup sugar, baking powder, and salt in a large bowl. Cut 7 tablespoons butter into flour mixture until mixture resembles a coarse crumb. Stir milk into crumbles until topping is just moistened. Spoon topping over apricot mixture. Sprinkle remaining 2 tablespoons sugar over topping.
  4. Bake in the preheated oven until golden brown, 30 to 35 minutes.

Followed the recipe with minor tweaks. Added a bit of ginger, 1 cup extra of fresh apricots and a bit less milk. The family loved it, great recipe, thank you!

This was very good, but I would do at least 8 cups of apricots, and I would put the spices in the batter—either instead of in with the fruit or in addition to the spices in the fruit.

Made is this adhering strickly to recipe. The cobbler portion is what disappointed me: There was too much and it soaked up the apricot juice and consistency was like a biscuit. I was hoping for a crispy cobbler. If I make this recipe again, I will halve the topping or try a different topping.

This recipe was great. It is more cake than I’m used to with a cobbler but everyone gave wonderful reviews and it’s a very simple recipe.

Instead of making the topping as suggested use a white cake mix and use 7 teaspoons of butter non melted and with your hands knees it into cake mix making it crumbly and add to top and bake for same time put on top of apricots and add cinnamon at top and you will love the flavor ! Picture is before baked !

This is a great recipe. I thought that I had messed it up when incorporating the dough mixer. But it turned out delicious. The cobbler was light and whent great with the apricots. WOW, thanks for sharing!

Easy to make and hubby loved it!!

I make this every June since I have an apricot tree. The only modification is I increase the fruit to 10-12 cups and increase sugar and cornstarch or flour. I divide the fruit mixture between 2, 9” pans. The biscuit topping recipe makes A LOT so no need to double that. It covers both pans completely as you can see from my picture of one of the pans. I also sprinkle with cinnamon and sugar. Serve it with vanilla ice cream-oh so gooood!

I think this is a delicious simple recipe! Now that I know the basics I can add my own touches. Thanks Allrecipies!

This tasted awesome! I added a bit more cinnamon. I also used a fork to measure the flour and leved it off. I didn’t use quite a cup of milk and limited the sugar sprinkled on top to half a tablespoon instead of the two tablespoons it asked for. The crust was the best I’ve made!

Yes but I had not made so I use allspice and I use blueberries with the apricot with a Twist and rum smells good. This was a good simple easy recipe to follow and with a crumble I actually add toasted walnuts and and toasted oatmeal

Will definitely make this again! I only added 3/4c Milk before it was very moistened, I was nervous bc no other comments mentioned this decrease but it came out amazing!! Delicious!!

Easy recipe and it was a hit! My sister who bakes all the time loved it and what a compliment it was to say so. Now I’m passing on the recipe to her.

Very good. I did add some cardamom, just about a 1/4 tsp. This will be my new go-to for summer potlucks.

Yummy recipe, with all my fresh apricots!

Delicious! Because some reviewers said the cobbler was “too cakey” (and because I have a ton of apricots from my tree), I increased the apricots to 8 cups. We like cinnamon, so I doubled that to 1/2 teaspoon. Also added a little almond extract to both the fruit and the topping. Really wonderful!!

we used very ripe apricots. so I did not pre cook them. we also used stevia sugar blend to cutting the sugar. I used raw sugar on top with dabs of butter. I also added ginger,.cinnamon, & nutmeg in the apricots and topping.

Perfectly delicious!

Followed directions to a tee except I used seven cups of apricots (got a lot of apricots on the tree this year) and it was wonderful. The crust was perfect and really complemented the apricots. I will definitely be using this recipe again!
