Sautéed Radish Greens

Beautiful greens being thrown away or composted seems like such a waste. Similar to arugula, radish greens have a mildly spicy flavor. Fresh from the farmers’ market, they are at their best.

Ingredients

  1. 1 tablespoon extra-virgin olive oil
  2. 1 ½ teaspoons butter
  3. 1 clove garlic, minced
  4. 4 medium purple radishes, sliced
  5. 1 bunch radish greens, washed and chopped
  6. ¼ cup crumbled feta cheese

Instructions

  1. Heat olive oil and butter in a saucepan over medium-low heat until butter melts. Add garlic and sauté until softened and fragrant, about 1 minute. Add radish slices and sauté to bring out their sweetness, 1 to 2 minutes. Add greens and sauté until wilted, 1 to 2 minutes.
  2. Remove from the heat and stir in feta cheese.
  3. You can substitute sweet onion or shallots for the garlic.
  4. Choose a large bunch of radishes to have enough greens for 2 servings.

  6. : Cut the roots off. Fill a large bowl with cold water and submerge the greens. Swirl them around so that the grit frees itself. Use a colander to drain the dirty water. Repeat the process until the water stays clean.

Really tasty. It was a little more bitter than we prefer. I will try tweaking the recipe with the addition of a less bitter green.
