Zucchini Breakfast Quesadilla

For a holiday feast, this is the ideal side dish. Roast pork or turkey go well with it. Can be prepared the day before and cooked in a double boiler.

Ingredients

  1. 1 teaspoon vegetable oil
  2. 1 medium zucchini, cut into 1/2-inch pieces
  3. 2 medium scallions, thinly sliced
  4. ¼ teaspoon ground black pepper
  5. ⅛ teaspoon dried oregano
  6. ⅛ teaspoon crushed red pepper flakes (Optional)
  7. 2 large eggs
  8. 1 tablespoon water
  9. ¼ cup shredded Cheddar cheese
  10. ½ teaspoon salt
  11. 4 (6 inch) flour tortillas

Instructions

  1. Heat a 10-inch skillet over medium-high heat. Add oil, then add zucchini, scallions, black pepper, oregano, and pepper flakes. Sauté until vegetables are tender, 3 to 4 minutes. Reduce heat to low, cover, and cook for 2 more minutes.
  2. Meanwhile, crack eggs into a bowl. Add water and whisk until well combined. Stir in Cheddar cheese and salt.
  3. Add egg mixture to the skillet and increase the heat to medium. Stir and scramble until eggs are soft-set, 3 to 5 minutes. Remove egg mixture to a plate and wipe the skillet clean with a paper towel.
  4. Spread 1/4 of the egg mixture onto half of each tortilla. Fold tortillas in half.
  5. Place the clean skillet over medium-high heat. Add tortillas, two at a time, to the hot skillet and cook until crisp, about 1 minute per side.
  6. Feel free to substitute any vegetables or cheese that you like. My husband likes these with mushrooms as well.

While this is definitely a very easy and healthy recipe, I did find it a bit bland. The spices and/or ingredients could be amped up. Maybe some other vegetables such as roasted red peppers or other spices. It was ok. Probably wouldn’t make again as is.

Delicious and easy! I used some frozen shredded zucchini that I had, and cooked that in the pan a bit before adding the scallions. Other than that, followed the recipe as written. I found it made 3 quesadillas for us; splitting it into four would have been a little skimpy on the filling for each one, imo. Great, simple recipe! Thank you for sharing it!
